A delicious, satisfying breakfast or afternoon snack for teens on the run!

Breakfast Burrito
Ingredients:
4 eggs
2 Tbsp. corn
1 Tbsp. 1 percent or fat free milk
2 Tbsp. green peppers, diced
1/4 cup onion, diced
1 Tbsp. tomato, diced
1 tsp. prepared mustard
1/4 tsp. garlic powder
1/4 tsp. red hot sauce, optional
4 8-inch tortillas
1/2 cup salsa
Instructions:
Preheat oven to 350 degrees F. In bowl, mix eggs, corn, milk, peppers, onions, tomatoes, mustard, garlic and hot sauce. Pour mixture into lightly buttered baking dish and cover with foil. Bake for 20-25 minutes until eggs are set and thoroughly cooked. Wrap tortillas in plastic and microwave for 20 seconds until warm. Cut baked egg mixture into 4 pieces and roll 1 piece of cooked egg in each tortilla. Serve each burrito topped with salsa, if desired.
