A delicious and zesty side dish that's a favorite of both kids and grownups.

Marinated Black Bean Salad
Ingredients:
2 cans black beans, drained and rinsed
2 cups fresh or drained canned corn
1/2 cup green peppers, diced
1/2 cup red peppers, diced
1/4 cup onion, diced
1 tsp. lemon juice
1 tsp. parsley
1/4 tsp. ground cumin
1/4 tsp. garlic powder
1 cup salsa
3/4 cup low fat Monterey jack cheese, shredded
Instructions:
In a bowl, combine beans and vegetables. In a small bowl, whisk together lemon juice, seasonings, and salsa. Pour dressing over vegetables and stir to coat. Cover and refrigerate for at least 30 minutes. Before serving sprinkle with cheese, if desired.
