Crispy, sweet, oven-baked and full of vitamin A. Need we say more?

Sweet Potato "French Fries"

Ingredients:

Sweet potatoes, washed and peeled
Non-stick cooking spray

Instructions:

Spray cookie sheet with non-stick cooking spray, or use a Teflon sheet or baking stone. Cut peeled sweet potatoes into French fries or 1/2-inch circles. Spread in a single layer on baking sheet and cook at 400 degrees F for 20-30 minutes. Turn halfway through cooking.
